The dripping makes me taste for more even when I’m satisfied.  Every time I make chicken gravy, everyone is always wanting to come back for more of it because of how super delicious it is.

What is Chicken Gravy?

Chicken gravy is made out of chicken stock, butter, heavy cream, and flour. You can make homemade chicken gravy with or without chicken drippings, and it tastes so much better than the packaged stuff. What are Chicken Drippings?

Drippings are what are left in the roasting pan after cooking the turkey. This includes fat that has melted and any bits of meat that have fallen off.

The remaining extra liquid will be poured away from the chicken into a separate bowl and used to make the chicken gravy. The most delicious and flavorful gravy recipes use drippings.

Can Chicken Gravy be made without Chicken Drippings?

As I said earlier chicken gravy can be made with or without chicken drippings from a roasted chicken. To make chicken gravy without chicken drippings, you have to add a little more chicken broth and some chicken bouillon paste for more flavoring.

 

How you can make Homemade Chicken Gravy with or without Drippings?

Add your droppings from roasted chicken to a measuring cup (optional). When you have taken your chicken out of the oven, pour out the drippings from the pan into a liquid bowl or measuring cup. Allow the dripping to stay for some minutes to allow the fat to naturally separate from the rest of the drippings.

When you do this, you will notice that the fat will rise to the top leaving the drippings on the bottom. Skim out most of the fats from the top of the drippings using a large spoon or ladle.

Make the roux: Heat a saucepan over medium heat. Add 1/2 cup of drippings or chicken broth (if you are not using dripping) to the pan. Add 1/4 cup of flour and whisk together until it makes a smooth paste, you can add more flour if it seems a little greasy. Cook, whisking until the mixture begins to change to a light golden color.

Add more drippings and broth: Whisk in an additional 1/4 cup of drippings (or a teaspoon of chicken bouillon paste) and 2 cups of chicken broth.

To thicken: Allow the chicken gravy to cook, whisking constantly for about 5-8 minutes, or until thickened. If the gravy gets thicker, add more broth or drippings liquid. If the gravy is too thin after cooking for 10 minutes, add a cornstarch slurry (mix 1 tablespoon of water with 1 teaspoon of cornstarch and then add it into the gravy). Once you are satisfied with the consistency of your gravy, taste it. Add more pepper and salt if needed, and some chicken bullion taste if you want more flavor.

How you can make your Homemade Chicken Gravy without Flour?

To make a smooth, creamy, and rich gravy, a roux made with flour is the most effective. However, it’s very possible to thicken gravy without flour. If you are making flourless gravy it will be made similarly, but without making a roux.

Instead, add a cornstarch slurry you will also need 1 tablespoon water, 1 teaspoon cornstarch for every cup of gravy base in the pan, to thicken the gravy.

Chicken gravy is best enjoyed the day it’s made, but you can refrigerate for up to two days. You can also freeze it for up to four months.

Ingredients for Chicken Gravy

  • 3/4 cup of drippings from roasted chicken
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium chicken broth or vegetable broth or turkey broth (add extra 3/4 cup if not using drippings)
  • pepper and salt to taste

 

Easy Chicken Gravy Recipe

  1.  If you are using drippings (optional): When you have taken your chicken out of the oven, pour the liquid and drippings from the pan into a liquid measuring cup or a bowl. (Be careful when you are tipping the pan away from your body so it won’t burn you) Allow the dripping sit for a minute, allowing the fat to naturally separate from the rest of the drippings. You will notice that the fat will rise to the top, leaving the drippings and liquid on the bottom. Skim out most of the fat from the top of dripping using a large spoon or ladle.
  2. Use a large saucepan to make the gravy and add 1/2 cup of drippings or chicken broth(if you are not using drippings) to the pan.
  3. Whisk together 1/4 cup of flour to the pan until it makes a smooth paste. (At this point, apply your own knowledge of what you want. You want a pasty consistency, if it seems a little greasy, add more flour till it gets to your taste).
  4. Whisk the mixture slowly over the heat as it begins to brown when you have found the right consistency. You are creating a roux.
  5. Once you get a nice light golden color, add 2 cups of chicken broth and 1/4 additional cups of drippings (or 1 teaspoon chicken bouillon paste for flavor if not using drippings).
  6. Allow the chicken gravy to cook, whisking constantly for about 5-8 minutes, or until when it thickens.
  7. If the chicken gravy is too thick, add more broth or drippings liquid. If the chicken gravy is too thin after cooking for 10 minutes, add a cornstarch slurry (mix 1 tablespoon of cornstarch with 1 tablespoon of water and then add to the gravy).
  8. Once you are satisfied with the consistency of your gravy, season with pepper and salt (if needed to taste, and enjoy).
  9. You can store leftover chicken gravy covered, in the refrigerator.

You can serve leftover chicken gravy with;

  • slow cooker chicken breast
  • one pan roast chicken and vegetables
  • stuffing baked chicken
  • perfect mashed potatoes
