Instead of buying one at the store, you can prepare your homemade fajita seasoning recipe. The ingredients can be mixed together and it’s incredibly simple to make in just a few minutes. When making your fajita seasoning you can reduce or omit the salt and the sugar if you want to.  However, making your own allows you to adjust the ingredients and proportions according to the way you want it.


What is Fajita Seasoning Recipe

Fajita seasoning is a blend of chili powder, sugar, salt, cumin, garlic powder, onion powder, a bit of cayenne pepper, and paprika mixed together. Personally, I include salt and sugar in my fajita seasoning, but you can reduce or remove them as you see fit. Homemade Fajita seasoning mixes are a lot cheaper also.

If you are purchasing your fajita seasoning in a packet, it might contain some ingredients like modified corn starch, yeast extract, caramel coloring, and maltodextrin. You can skip all of that and add flavor.

I like making my fajita seasoning at home because I can choose to omit some ingredients that I don’t feel comfortable with. Making your seasoning at home allows you to unleash your creativity.

Making fajita isn’t complex and stressful but it is very simple with just little mixing of the ingredients, that’s all. Everything tastes better with a little fajita seasoning.

Difference Between Taco Seasoning and Fajita Seasoning

Taco seasoning and fajita seasoning are almost the same things. There might be some minor differences in ingredients, especially between recipes and cooks, but the flavors are very similar.

  • Taco seasoning has ground coriander, but fajita seasoning does not have but I use fresh coriander in my marinade.
  • Fajita seasoning has garlic powder and onion powder, but taco seasoning does not have garlic powder and onion powder but you spice their meat with fresh garlic and onions.
  • You can use sugar and cornstarch in either recipe or it can be omitted.

The main ingredients in taco seasoning and fajita seasoning are cumin, paprika, and chili powder are almost the same proportions too.

Homemade Fajita Seasoning Recipe

You put fajita seasoning, for every individual 8-10 inch quesadilla, add 1/2 teaspoon of fajita seasoning mix to your fillings of choice.

Shredded chicken or sliced steak, peppers, tomatoes, pepper jack cheese, fajita seasoning, black beans, onions, and corn are good in a quesadilla. If you would like a vegetarian version, do away with the meat and substitute with rice and beans instead. You can also add fresh herbs and a dollop of sour cream when serving will round out all the flavors.

How to make quesadillas in the oven

Firstly coat one side of your tortillas with cooking spray. Lay the coated side down on an ungreased baking sheet, top with a seasoned filling of choice, top with another tortilla, and coat with cooking spray. Then bake it at 450 degrees for about 10 minutes, or until cheese is melted and the filling is warmed through. Cut into wedges.

How to make Fajitas with Fajita seasoning

I use half the recipe of seasoning per 2 pounds of chicken. But if this is too spicy for you, please use less of it or omit the cayenne pepper when you are blending the spice. Here are some method of preparing your chicken fajitas:

  • Use a large plastic bag, add 2 pounds of chicken, 1/4 cup of minced cilantro, 3 tablespoons of lime juice, and 1/2 the fajita seasoning made from the recipe below. Mash until chicken is evenly coated. Marinate for at least 30 minutes at room temperature or up to an hour in the refrigerator.
  • In a large skillet over medium-high heat, heat 2 tablespoons of olive oil until shimmering. Add your chicken and cook until crispy and browned on one side, about 8 minutes. Flip and continue to cook until browned on the second side and chicken registers 160 degrees, about 8 to 10 minutes longer. Transfer the chicken to a cutting board and allow it to cool for 5 minutes before cutting into strips.
  • To the skillet with the fat over medium-high heat, add bell peppers and onions and cook until tender, about 5 minutes. Push onions and peppers to one side and add the sliced chicken back to the skillet for serving.
  • You can now serve with tortillas, cilantro, avocado, and sour cream, or with any of your favorite toppings.

Fajita Seasoning Recipe

In a small bowl, stir chili powder, garlic powder, onion powder, cumin, sugar, salt to taste ( like 1 teaspoon), paprika, and cayenne pepper to taste (like a half teaspoon). You can reduce it or omit it if you are sensitive to spice.

Note: The full Fajita seasoning recipe listed is enough for pounds of chicken or steak. Divide it into half if you are cooking two pounds of chicken, and into a quarter if you are cooking one pound of chicken.

And if you are sensitive to spice, you can reduce the quantity of the seasoning suggested for your amount of chicken or steak, and consider removing the cayenne pepper completely.

Store your fajita seasoning in an airtight container to ensure the herbs and aromatics remain their volatile oils. Fajita seasoning will last up to six months. For best quality keep in a cool cupboard, not next to your stove.
