  1. Pro-broth: to make a delicious pro-broth, you will need the following; Fresh onions and ginger which you will briefly cook in a skillet until they are charred, to add that classic smoky flavor to the broth.
  2. Spices: They are 5 important spices in pho- broth which are; coriander seeds, cinnamon sticks, whole cloves, star anise, and cardamom pods. I recommend using it without grounding.
  3. Fish sauce: It is traditional to add a little splash of fish sauce to the broth.
  4. Sweetener: Instead of using traditional yellow rock sugar I use brown sugar to sweeten my broth. But any of it that you prefer would work out well.
  5. Seasalt: Using sea salt for seasoning.
  6. Thin rice noodles: Traditional pho soup is made with thin rice, in order to prevent the noodles from overcooking in the broth. It’s traditional to cook pho noodles separately on their own. Then the noodles will be added to each serving bowl, and the protein, hot broth, and toppings will be added on top of the noodles.
  7. Toppings: In pho soup, the toppings are not optional, they are important in the soup. Ingredients Pho Soup

  • 1 onion, unpeeled and sliced
  • 5 slices fresh ginger
  • 4 pounds beef soup bones
  • 1 teaspoon of sea salt to taste
  • 4 quarts water
  • 21/2 tsp fish sauce
  • 2 pods star anise
  • 1 packaged dried rice noodles
  • 1 pound beef top sirloin, thinly sliced
  • 1/2 cup chopped cilantro
  • 1 tsp chopped green onion
  • 11/2 bean sprouts
  • 1 bunch Thai basil
  • 1/4 cup chile-garlic sauce (such as sriracha but it is optional)
  • 1/4 cup hoisin sauce(optional)
  • 1 lime, cut into 4 wedges

How to Prepare Pho Soup

  1. Preheat oven to 425 degrees
  2. Place beef bones on a baking sheet and roast in the preheated oven until browned, about 1 hour.
  3. Place onion on a baking sheet and roast in the preheated oven until blackened and soft, about 45 minutes.
  4. Place bones, ginger, onion, sea salt, star anise, and fish sauce in a large pot and cover with 4 quarts of water. Bring to a boil and reduce heat to low. Simmer on low for 6 to 10 hours. Strain the broth into a saucepan and set aside.
  5. Place rice noodles in a large bowl filled with room temperature water and allow to soak for 1 hour. Bring a large pot of water to a boil and after the noodles have soaked, place them in the boiling water for 2 minutes. Bring stock to a simmer.
  6. Divide noodles among 4 serving bowls, top with cilantro, sirloin, and green onion. Pour hot broth over the top. Stir and let sit until the beef is partially cooked and no longer pink, 1 to 2 minutes. Serve with bean sprouts, lime wedges, Thai basil, chile-garlic sauce, and hoisin sauce on the side.
