Vegetable Soup Recipe with Beef

This type of vegetable soup is made with waterleaf, fluted pumpkin, stockfish, beef, crayfish, peppers, salts, and other ingredients. It is very delicious and it goes well with garri, fufu, wheat, or any swallow of your choice.

Ingredients for Vegetable Soup Recipe Easy

  • 1 cup of crayfish
  • Beef
  • 10 cups of waterleaf
  • 1 cup of palm oil
  • Salt and pepper to taste
  • 1 cup of periwinkles (optional)
  • 3-4 cubes of Maggi
  • Half cup of onions
  • Goat meat(or any other meat)
  • 0.6 kilos of roasted fish
  • 6 cups of sliced ugu (fluted pumpkin)
  • The average size of stock fish head
  • 5-6 fresh peppers

The measurement above may be adjusted if would like to cook less or more soup.


How to Prepare Vegetable Soup Recipe Easy

  1.  Slice the water leaves and fluted pumpkin leaves with a kitchen knife, make them be thinly sliced. (Wash them well with clean water before slicing them)
  2. Repeat the same with water leaves ( sieve  after slicing to strain excess water.)
  3. Wash the roasted fish, remove center bones and cut into pieces (not too tiny). Wash your stockfish very well also to prevent sand in the soup.
  4. Season the goat meat with a teaspoon of salt, 2 seasoning cubes,1 teaspoon of pepper, sliced onions, allow the meat to steam at low heat. Add 1 cup of water let it cook till tender.
  5. To the boiling beef, add the washed stockfish, roasted fish, and allow them to cook until the water is dried.
  6. Once the water is almost dried add the palm oil, add 2 cubes of seasoning to taste.
  7. Add the waterleaf and stir well and allow to simmer for 4-5 minutes while you stir occasionally.
  8. Add the blended pepper and crayfish stir all together and add a little salt to taste(not too much salt)
  9. Add the fluted pumpkin and stir well and allow it to simmer for three minutes.

This is how to make your delicious vegetable soup. You can serve with any kind of swallow you desire be it fufu, eba, semo-vita, or pounded yam.

Nigerian Made Vegetable Soup Popularly known as Edikan-ikong

This vegetable is delicious and also very easy to make but it requires chopping and a bit of simmering until you have got soup everyone will love. This vegetable soup is made with different kinds of vegetables such as carrots, celery, potatoes, tomatoes, green beans, corn, peas, garlic, and yellow onions, from seasonal fresh veggies to frozen.

  • 1 cup of peeled and chopped Potatoes
  • 11/2 cups chopped celery
  • 1 cup of chopped Green beans
  • 11/2 cup of Corn
  • 1 cup of Peas
  • 2 cups of chopped Carrots
  • 11/2 cups chopped Yellow onions
  •  Cloves Garlic
  •  Diced Tomatoes
  • 2 teaspoon of Olive oil
  • 1 tablespoon of Dry pepper
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • Chopped fresh parsley
  • 1 teaspoon of salt to taste
  • 4 cans low-sodium chicken broth or vegetable broth


How to Prepare Locally Made Vegetable Soup

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped carrots, onions, and celery and saute for 3 minutes then add garlic and saute 30 seconds longer.
  3. Add in broth potatoes, tomatoes, bay leaves, thyme, and season with pepper and salt to taste.
  4. Allow to boil, then add green beans.
  5. Cover and simmer until potatoes are almost fully tender about 30 minutes.
  6. Add corn and peas and cook for 5 minutes longer.

Your soup is now ready, you can serve warm. If you need more flavor you can add basil, oregano, Italian seasoning, or marjoram.
